Easter (a bit late)

This Easter I was lucky to have my friend Lucia visit me from Newfoundland (or Holy Cross in MA) and aside from having a wonderful time, she was so helpful when it came to baking for our Easter coffee hour at church. We made so many desserts and dips and they were delicious.
One of the desserts we made was

A VANILLA CROSS CAKE WITH CHOCOLATE ICING!!!!
Knew you'd be excited.

We also made butter cookie dough.
In a giant mixing bowl mix sugar and butter


Mix until the butter is in smaller clumps and then fully mixed.

Valentine's Day

My mother has ALWAYS adored Valentine's Day, and goes cookie crazy around this time, so I thought I'd join in the fun and give a few cookies to my friends. I decided on Meringue Cookies from One more Moore and only added a little vanilla and some festive red dye. I haven't had them so I hope my additions worked. Anyway, here are the cookies in addition to some butter cookies that my mom made.

New Year's 2010

With the new year, I've decided on some new resolutions. I fully intend to start becoming more like my mother (that wasn't the official way I worded the resolution, but the outcome will hopefully be the same). With her strong influence, I've decided to bake and knit more-two things I love but either don't have time for, or need inspiration to start. I also love photography, so I'll probably work on that more as well. Either way, my mother decided that the best way to start this off was by making cupcakes for my friends' New Year's Eve party. The entire afternoon before was dedicated to practicing piping, which I also love. Here are the results:


The lighting was terrible, and my camera was flashing at random times, but the idea is the same: vanilla cupcakes with cream cheese frosting and white chocolate "2010" dyed light blue.
They were delicious, if I do say so myself, and a delightful way to start the New Year- let's see how long this lasts.
